Caprese Salad With Napa Flair
A Pairing for our
Pocai Vineyard Rosé Wine

We took a classic Caprese salad and added a little a little Napa twist with fresh peaches. It's a simple recipe that's packed with flavor.


Enjoy on a warm day with a refreshing glass of our Ballentine Pocai Vineyard Rosé.

INSTRUCTIONS

INGREDIENTS

3–4 large ripe tomatoes (heirloom or vine-ripened)

12 oz fresh mozzarella di bufala

2 large peaches

1 bunch fresh basil

3 tbsp extra-virgin olive oil 

flaky sea salt

freshly ground black pepper
balsamic glaze

DIRECTIONS

Slice tomatoes into ¼–½ inch thick rounds.

Slice mozzarella into pieces similar thickness to the tomatoes.

Slice peaches into wedges similar to tomato thickness.


On a platter, alternate tomato → peach → mozzarella → basil leaf with overlap.


Sprinkle salt & freshly cracked black pepper over the top.


Drizzle olive oil evenly and drizzle balsamic glaze very lightly. across the top.
