Cherry-Chipotle Smoked Baby Back Ribs

Zinfandel is the perfect wine to stand up to the incredible depth of flavors created by the homemade rub and the smoker. Win has honed this recipe over several years, using the traditional 3-2-1 method of smoking pork ribs but with some minor adjustments. Be sure to download the matching rub recipe.

INGREDIENTS

1 rack of baby back ribs (membrane removed)

Sweet & Spicy dry rub

Kinder’s Pineapple Chipotle BBQ Sauce

Cherry preserves

Cherry wood chips

Tart cherry juice

DIRECTIONS

Follow directions for Sweet & Spicy Rub for Ribs.


Remove ribs from fridge & unwrap.


Pre-heat smoker to 225F and use cherry wood chips.


Dry smoke ribs for 3 hours.


Form a pouch with aluminum foil to hold each rack, add ½c tart cherry juice at the bottom, and seal tightly. Smoke for 2 hours.


Mix cherry preserves into bbq sauce until you can taste the cherry flavor.


Apply sauce liberally and smoke for 1 additional hour.
